When it’s cold, the body asks for energy food and a nice winter meal: stews, soups, meat… Whatever your preferences, the main thing is, that – besides being delicious – the meal heats us up. Cueva La Martina has recipes that not only warm the stomach, but also raise the spirits. These are traditional dishes from La Mancha that satisfy every culinary desire, even in the cold season.
Migas de Pastor: This is a very traditional dish of our region and, as the name says, a typical shepherds’ dish, made of the bread leftovers from the previous day. Mixed with garlic, extra virgin olive oil, sausage, bacon and other pork ingredients, in addition to grapes, it is very tasty.
Caldereta de Cordero: There are many ways to prepare this lamb stew, but it generally contains – apart from lamb – onion, tomato, red pepper, garlic, extra virgin olive oil and white wine. We serve it very hot so it is an ideal meal to warm you up.
Gachas Manchegas: Another local dish, linked in addition to the slaughtering season. The main ingredient, vetch flour – a plant that is grown only in our region, is mixed with pork belly, garlic, paprika, extra virgin olive oil and salt. At first glance this is a simple meal, but the vetch gives it an exotic touch. Moreover, to get it really tasty, you have to know how to cook it. And we know.
Bogavante con Garbanzos: This stew joins the delicious taste of lobster with chickpea, this legume so rich in nutrients, which is just what the body asks us in the coldest days.
