While Spain commemorates the fourth centenary of the death of Miguel de Cervantes, eight renowned restaurants in Castille-La Mancha – including Cueva La Martina – have organized the II Gastronomic Days of Almadraba Tuna to offer its guests during one month real gastronomic delicatessen prepared with Almadraba tuna.
From 24 May to 21 June, you have the opportunity to taste in Cueva la Martina tapas and dishes of wild bluefin tuna caught with the Almadraba technique, taking advantage of the migration of tuna from the Atlantic Ocean to the Mediterranean Sea.
“Almadraba“, a word of Andalusian arabic origin, is a form of fishing on the Coast of Cádiz with 3,000 years of history: Invented by the Phoenicians, it consists in positioning the nets precisely in the section of the sea close to the Straits of Gibraltar, where the tuna pass on their way from the Arctic Circle to the Mediterranean Sea, as they migrate to warmer water.
The dishes we serve as from May 24 and during the next four weeks in Cueva La Martina are authentic culinary delights, obtained from the meat of this very popular fish, that is highly recommended in any balanced diet:
Spicy Tuna Sashimi
Tuna tartare with black garlic
Tuna with small green kidney beans
Tuna belly braised on hot stone with Himalayan Salt
Tuna Chop Suey with Vegetables
